The Casserole With the Noodles and Peas In It

When I was growing up, my mom would make this casserole with butter & herb noodles, chicken, and green peas. It was always a favorite, except for the peas. My sister and I would both diligently pick through the servings on our plates to make sure that we removed EVERY SINGLE PEA. Then, after all the hard work, we still had to eat at least half of them! (I am pretty sure that my parents sat there laughing at us, knowing their evil plan the whole time)!

As I got older, I started to like this casserole better and better...even the peas. Now, it's a favorite of ours. It's simple, but the noodles are not that healthy, so we don't have it too often.

Here's what you will need:
  • 2 bags of Knorr (used to be Lipton) Butter & Herb noodles
  • 1/2 bag of frozen peas, unthawed
  • 3-4 chicken breasts, cubed and cooked (either boiled or sauteed in a skillet)
  • chicken stock
  • cheese, for topping
-Cook your noodles according to the package directions, but instead of water, use chicken stock or broth...it makes it richer.


-Cook your chicken while your noodles are cooking..but be sure to stir your noodles often, because they will stick when it starts to thicken!

-When your noodles and chicken are finished, mix them in a bowl with your peas, then spread into a casserole dish. Top with shredded cheese (if desired), and pop it in the oven with a pan of "Sister Sweetpants" rolls.


Bake at 350 degrees just until the cheese is melted, and enjoy!
